Our body react by contrasting it with our immune system, and this response can last up to 8 hours, causing a  massive stress for our body. The European Union introduced mandatory food labels, the real Id card of a product.

  • The name and address of the producer
  • Instructions for a correct consumption
  • Storage instructions
  • The ingredient list, including possible additives, sweeteners and allergens , flavourings and GMO, if any
  • “Best before” indication which means the date within the quality product can be guaranteed
  • “Expiry date” indication which means the date when the product can’t be considered edible anymore
  • Nutrition facts table, indicating energy , protein, sugar, fat, fiber, sodium etc. values for serving or for the whole wheight of the product.

Quality is what the consumer requests, as well as quality is what the large distribution and foods processing industry demand in terms of production technologies and food safety.
Health and Hygiene and legal quality
This quality is certified by the punctual applications of the current regulations. All actions and measures requested to guarantee the eligibility for human consumption are performed. These regulations take into account the whole chain, starting from the origin, and each passage up to the final consumer.
HACCP (Hazard Analysis Critical Control Points) is the control system able to guarantee the public health.
Italy has the record for the number of checkings during each phase of the process, from pre-production to commerce. Italy has a double regulation: one refer to the agro-food field on its whole, the other refers to each single product. The aim is simple: the guarantee that processing, transformation, packaging, storaging, transport, distribution, handling, sale , and serving are done in the most hygienic way” (HACCP art.3, 1 DL 155/97).
